Mel de Pipeiros is a monofloral wild lavender honey from the Serra do Caldeirão in southern Portugal. Here, dry soil and a warm Mediterranean climate create ideal conditions for wild, uncultivated lavender, the main nectar source for our Iberian honey bees.
The result is an exceptionally light honey with a refined aroma and a soft, elegant taste. We harvest only once a year, when the honey is fully mature, then bottle it raw and unfiltered with as little intervention as possible.
Honey owes its remarkable qualities to much more than taste alone. Its natural composition, acidity and low water activity not only shape the character of the honey, but also contribute to its natural protection and exceptional shelf life.

Natual sugars bind most of honey's moisture, helping give it exceptional stability.

Honey is naturally acidic. This creates an environment in wich many microorganisms find it difficult to grow.

Honey's acidity, low water activity and naturally occuring compouds contribute to its antibacterial activity.

Independent analysis shows that 82% of the pollen comes from wild lavender. This exceptionally high proportion makes it a monofloral honey and gives it its distinctive character.

Bottled with minimal intervention, without intensive heating or fine filtration, so the honey retains its natural aroma, texture and purity.
